I always seem to bruise my peaches when I let them ripen completely on the tree and they seem to ripen at diffeerent times so I can only pick a few at a time. I was just wondering if I could pick the whole tree just before they ripen and then let them fully ripen in my storage room. This would make the process a simpler and I would have less waste.

Since they will continue to ripen after picking this should work.  I'm not sure you will develop the same amount of sugar and therefore sweetness in those picked and ripened this way.  they might end up tasting more like the South American fruit we get mid-winter. Yuck.

You can pick your peaches whenever you want to. They will get deeper in color and softer but they will not get sweeter! Peaches do not have any starch in them to be converted into sugar, so they will never get any sweeter than when they are picked.
