when is the best time to harvest the peaches from my peach tree

I have a small peach tree in my front yard. Last summer it got so many peaches the tree split and I had to tie it together to repair it. This year its alot taller and going to have many more peaches. When I picked them last year the were JUST ripe and I had to use them quickly. I would like to know when the best time to pick them before being ripe so they will last longer and I can give them to family, friends, and neighbors to enjoy without them going bad so quickly.

we carefully watch for the first bees to attack them....then we pick them all they are still hard...........so for us 1 or 2 days in a brown paper bag single layer and folded over twice with clothes line clips holding it closed..........the rest go into refrigeration for friends & neighbors, relatives and the food bank.
