For peaches, you can use a bit of lemon juice, sugar and honey.
1 cup water
1/3 cup sugar
1/3 cup honey
2 T. lemon juice
Heat water, add sugar, honey and lemon juice and reduce slightly. Dip each piece of peach into the mixture then you can place the pieces directly on the oven rack with a baking sheet below them. Set Temperature at 165 degrees. Leave the oven open slightly to allow air to circulate. You will need to leave the peaches for 6-8 hours until they are fully dry. You can then store them in a container for later use.
