cut flowets when they start to seperate...don't let yellow flowers start to bloom as broccoli changes it taste. Cut florets right under it on a SLANT. cut all that are ready.
Use large metal bowl outside with 1/2 cup salt and cold water......put inside and be ready for tiny black beetles and other bugs to jump out fast...that is why I said do it outside. They will get out fast......empty....rinse...do 1/2 cup salt and do it again....pushing it down to make sure salt water get everything out........and now rinse in very cold water. I cut the stem up and cooked that until tender and took it out.....Blanched the florets.....cooled them in ice water and drain them put them on a metal tray and froze them, In about 2 hours and took them out and packed into freezer bags and used the machine to make 9 servings...back into freezer. The reason for the slant cut on the stem in the ground is to keep water running off and not making them soft as they will go back. More florets will grow on the sides...not as big as the original ones.
