Wash & rinse the spinach well. take off the long stems as they are very hard. Cook the spinach in salted boiling water.

Drain the spinach..................add medium white sauce and seperate into vac bags.........seal and enjoy for the winter into when it will grown again next year.
I don't know if you like to do soup for there is Something called Italian wedding soup and it has tiny meats balls in it, chicken broth, rice and spinach.........it is delicious. You also can add some finely chopped chicken and parsley................
