Should the stems be skinny or fat when cut?  I never know how long to let the rhubarb grow before I cut it.  What is the proper way to cut it.  My friend says I should always pull and twist the stem and not to use a knife and cut.  I have always used a knife because it doesn't seem to break off when I twist it.  I have had my rhubarb for many years.

I find that there are a couple of different varieties of rhubarb; thick and skinny stalks.  Our preference is to wait until the stems are 10+ inches long and starting to get some 'red' color.  We cut with a paring knife close to the base.  Never take more than 30% of one plant (at a time).  In Minnesota, we stop cutting around the 4th of July.

You should twist and pull at the same time.

If you let the stalks get too big, it will form a flower on top amd then it is pretty late to harvest.

The leaf stems can be harvested as soon as the leaf opens fully.  Doesn't matter if it's fat or skinny.  You should pull them straight away from the plant. Twisted is not required.  Don't cut them.  You can google the reasons...
