When is the proper time of year to prune outdoors gardenia bushes ?

I have 2 lovely gardenia bushes outdoors and wonder when is the right time to prune them and how much.  Last winter was a hard one for us here in Ooltewah, TN  (Chattanooga area) and I thought I had completely lost them, they looked really dead this Spring but they came back and have been covered with blooms.

I think I should cut them back but don't know when or how much.

You can safely trim away 1/3 of the bush with no harm to the plant, but you must trim them when the plant is dorment, late October or when the temperature is at or below 40 degrees for several days.
