What time of year should holly trees be pruned and how close should they be trimmed?

Our holly trees were [lanted by a nursery about 20 years ago as bushes.  Over the years we have only trimmed them and now they are tall, tree-like plants that will be impossible to dig-up.  They are too close to the deck & house thus causing unsightly blockage of view.

I would like to preserve these trees since rhey provide beautiful, fresh, foliage for holiday decorating.

Please provide suggestions on when/how of MAJOR pruning/enhancement of the trees without killing them in the process.
