Most tomatoes will ripen eventually, but there are ways to make it happen more quickly. firstly, only pick tomatoes which have a star at the bottom and let the rest ripen on the vine in the sun, for best flavour. (The star is lighter than the green and radiates from the centre)
If you live in a region where you had to bring them all in at once before a hard frost, put some in different spots. Put the ones with the lightest star and starting to ripen on a sunny window and they will ripen fastest. Put a few in a paper bag with an apple half and they should also ripen faster. (But watch them closely as they may also rot faster too.
The rest, place in paper towel lined baskets or box flats from the grocery store and place by colour, separated in each basket, so you can have tomatoes well into December.
