I have two distinctly different kinds of globe artichoke plants in my yard. When purchased from the Fred Meyers here in Hillsboro, they both had the same kind of tag on them and naturally, I expected their chokes to be the same. However, when the chokes began to grow on these two plants, one set came out as a globe with tightly fitted leave like a ball , while the other's leaves/petals bent out from the center of the choke near the bottom giving the choke a taller, more narrow set of edible leaves. These leaves/petals, seem to become tougher as the choke gets older and therefore are harder to eat.
