should i pick them while still not quite ripe or wait until they are fully ripe

We watch for the bees.....as soon as they sting the peaches, it is time to take them off the tree......we keep some single layer in a brown bag with the end secured with clothes clips and we keep that turned sideway to let them ripen......the rest go into refrigeration and we give them to relatives, friends & neighbors and tell them how to ripen them.
